This Festive Bikini – A Recipe
WHere is a simplified take on a beverage featured on a new menu. Designed as a batch pre-mixed that's bursting with the flavours associated with Christmas time, rendering it excellent for a festive gathering. Save the extra syrup for morning drinks, desserts, or to make additional servings of the drink.
Bikini Recipe
Yields 10 people
To make the Clementine Syrup (produces 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g granulated sugar
Ingredients for the Drink (produces 850ml, to serve 10)
400ml premium vodka
100ml London dry gin
150ml peach schnapps
200ml clementine syrup (see above)
Fresh cranberries, as a garnish
Mandarin essential oil, to finish
Instructions
To prepare the Cordial: Put all the ingredients inside a pan, heat until it reaches a light boil, agitating until the sugar dissolves. After that, remove from the heat and let it to reach room temperature completely. Decant to a sterilised bottle, cap it keeping it in the fridge, it can be stored for around four weeks.
Preparing the Batch Mix: Mix the specified spirits and syrup in a big jug, let it rest for 60 minutes, then pass it through best through muslin, to ensure it's perfectly clear.
To serve: Add 85ml of your cocktail base into a stirring glass containing ice, and stir gently for a minute to cool it down. Filter to a chilled martini glass or similar, garnish with some cranberries and finish by giving it a quick spritz of the essential oil over the top.
